Hi, I'm trying to find a place in Seoul that makes cheesecakes to send to my significant other for his birthday.

Hey Jas,
you can try Hans or Paris Croissant. Hans make very good cake IMO. It's a chain bakery. I think you might be able to order the cake online if you can understand Korean.
At gangnam there is a bakery called New York bakery. You might be able to find cheesecakes there.

Do you know of any Scandinavia(Swedish, Finnish, Dannish, etc) bakeries in Seoul or any other part of Korea?

I hadn't seen Scandinavian bakery in Seoul. They are mostly French or German. For Scandinavian cuisine, you can try the cafeteria/restaurant in National Medical Center (NMC) in Seoul. And if I'm not wrong, there is a Deli section that sells European breads /cheese/hams in the basement of Grand Intercontinental Hotel COEX.
German bakeries:
There is a German bakery in Seoul IN Grand Hyatt Hotel. May Bell Bakery, not far from from Itaewon hotel, which sells German-style breads. At Itaewon near Geckos, you can find Chef Meili’s Deli. At Hannam dong, close to the Hannam subway station, there is Ach So Bakery.
